- 3 Opal Apples, peeled, cored and chopped
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- Pinch of salt
- 8 sliced white bread, crusts removed
- 1/2 cup peanut butter
- 1/3 cup sugar
- 1 teaspoon cinnamon
- 4 tablespoons unsalted butter, melted
In a medium sauce pan, cook apples, 2 tablespoons butter, brown sugar, cinnamon, lemon juice and salt together. Cook over medium high heat until tender.
Preheat oven to 350F degrees.
In a small bowl combine sugar with cinnamon and set aside.
Flatten the bread slices with a rolling pin. Spread the peanut butter evenly on each slice of bread. Add a heaping teaspoon of the apples and roll up the bread around the filling.
Place in a baking dish seam side down and brush the bread with the melted butter and a sprinkle of the cinnamon sugar. Bake for 12-15 minutes until golden brown.
